I have a lot of no bake slices on the blog, simply because they are so delicious and easy! This is to add to that list and I hope you love it!

I have a very popular Ginger Crunch recipe that you can find here – the classic ginger crunch is buttery and gingery and oh so delicious. This no bake version is just as tasty but no need to bake.

This recipe has been around for years, I have found a few versions I tested but settled on this amended one from a Toy Library fundraising book – my favourite source of inspiration as the recipes are loved and tested often.

The ingredients for this one are very simple, the usual biscuit base with ginger and a simple ginger icing.

You will need:

  • Biscuits

  • Butter

  • Ground Ginger

  • Brown Sugar

  • Condensed Milk

  • Icing Sugar

  • Vanilla

Depending where in the world you are the biscuits will differ, here in New Zealand we can use wine biscuits, arrowroot or girl guide biscuits for the classic taste, elsewhere you may wish to use Marie biscuits, a rich tea biscuit or a sweet graham cracker.

Ginger is one of those flavours you either love or hate, I am not a huge fan of it myself but my husband is and he assures me these taste great!

The method for making them is very simple, you crush the biscuits then add the combined hot mixture of butter, brown sugar, ginger and condensed milk then stir this through the biscuits. While this base chills you can prepare the icing.

The icing is a simple mixture of icing sugar, butter, ginger and vanilla, this makes a lovely thick icing. I have doubled the quantities for this from the original recipe to give a lovely generous amount of icing, it works perfectly.

Once the slice has cooled you cut into squares and store in the fridge, or this freezes well too.

Additional Time: 30 minutes

Total Time: 45 minutes

Delicious easy no bake ginger slice

Ingredients

  • 250 grams Tea Biscuits (One Packet of Wine, Arrowroot, Marie, Rich Tea etc)
  • 125 grams Butter
  • 2 teaspoons Ginger, ground
  • 1/2 Cup Soft Brown Sugar, 100 grams
  • 4 Tablespoons Condensed Milk, 60 mls

Icing

  • 2 Cups Icing Sugar, 280 grams
  • 100 grams Butter, melted
  • 1 teaspoon Ginger, ground
  • 1 teaspoon Vanilla Essence

Instructions

  1. Prepare a 20cm square tin with baking paper and set aside, I like to spray my tin with a little cooking spray to help the paper stick
  2. Crush the biscuits in a food processor until you have a fine crumb
  3. Add the biscuits to a medium bowl
  4. Melt the butter in a small microwave proof bowl for 30 seconds or until melted
  5. Add to this the ginger, brown sugar and condensed milk and stir well to combine
  6. Pour this mixture into the crushed biscuits and stir well
  7. Spoon the biscuit mixture into the prepared tin and spread out evenly and firmly, pressing into the corners.
  8. Set aside or place in the refrigerator to cool
  9. Once cool prepare the icing
  10. In a small bowl add together the melted butter, sifted icing sugar, ginger and vanilla and mix well to combine, ensuring no lumps remain.
  11. Spoon this thick icing over the cooled slice and spread evenly, you may wish to use a little hot water to get a smooth finish.
  12. Allow the slice to set in the refrigerator before slicing.
  13. When ready to slice remove the tin from the refrigerator 20 minutes beforehand to allow it to come slightly to room temperature to make cutting easier.
  14. Remove from the baking paper and using a sharp knife cut into even squares
  15. Store in an airtight container in the refrigerator when not serving.
  16. This recipe also freezes well
