How refreshing! My Watermelon Mint Smoothie recipe is perfect for summer.
Hi guys!
I'd venture to say that eating watermelon is one of my favorite things about summer. I look forward to it every year. Whether it's a big wedges or bite sized nuggets ofsummer goodness... I cannot resist. I've been known to practically eat my weight in it some days.
One thing I'll do it chop it up in delightful bite sized cubes and serve it sprinkled with fresh, fragrant mint from my garden. The combination is so dreamy.
So I got to thinking that this fruity combination would make a lovely smoothie idea for summer... and so myWatermelon Mint Smoothie recipe was born!
Now instead of being nutrient stacked, this smoothie is going more for hydrating and cooling. It's sure to quench your thirst on a long, hot summer day.
The best part about it is it's only 3 ingredients... watermelon, mint and coconut water! The coconut water gives it a fun, tropically taste. If you don't have that you could also use non-flavored almond milk.
The trick is to freeze your watermelon beforehand. You'll want to cut it in cubes, then lay it out on a cookie sheet flat in the freezer. That prevents it from turning into one big solid chunk of frozen watermelon in a bag. It's almost impossible to blend that way. Trust me... I know from experience on that one. 🙂

MyWatermelon Mint Smoothie recipe is great for a snack or way to rehydrate after a run. If you want protein, you might still want to eat a bar but this would go great alongside it.

Ingredients
- 3 cups watermelon cubes, frozen
- ½ cup coconut water, can also use unsweetened almond milk
- 1-2 tablespoons fresh mint
Instructions
Put all the ingredients in a blender and mix until well combined.
Notes
When freezing your watermelon, let the cubes freeze on a tray and then put them in a bag so you don't end up with a big frozen watermelon blob. You can also use non-frozen watermelon and add a couple handfuls of ice.

LOOVE coconut water! That's the best for rehydration. Of course, the mint gives the zest in the drink. I would add a sprinkle of chia seeds for nutrients.
