Why I Love These Cookies

These cookies are the perfect harmony of sweetness and spice. The blend of cinnamon sugar on the outside creates a heavenly crust, while the inside remains soft and chewy. The addition of oats adds a delightful texture, making each bite a symphony of flavors.

How To Make The Oatmeal Snickerdoodle Recipe

Ingredients:

  • 1 cup softened butter (2 sticks)
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 cups flour
  • 3/4 cup instant oats
  • 1 1/4 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract

Cookie Topping:

  • 2 tablespoons sugar
  • 2 1/2 teaspoons cinnamon

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In the bottom of a stand mixer fitted with a paddle, mix butter and all the sugar.
  3. While the butter is mixing, combine flour, oats, baking soda, cream of tartar, cinnamon, and salt in a bowl.
  4. Once the butter and sugar are well mixed, add the egg and vanilla extract until well incorporated.
  5. Slowly add in the flour mixture until just combined.
  6. Mix the sugar and cinnamon for the cookie topping in a small bowl.
  7. Roll the dough into 34, 3/4-inch balls, and roll them in the cinnamon sugar mixture.
  8. Place the balls on two baking sheets and press down slightly on each.
  9. Bake for 9 minutes.
  10. The edges should be slightly brown; if the cookies look undercooked, that’s okay. You don’t want to cook them any longer, or they will be dry (unless you like them like that).
  11. Cool them on a rack and enjoy!

Pro Tip:

Don’t be afraid to slightly underbake the cookies. This keeps them wonderfully moist, ensuring a perfect balance of tenderness and flavor.
