These brown rice balls are a nutritious snack to have on hand and are great for school lunch boxes, providing a sustained release of energy.

Ingredients

2 cupsBrown rice (Main)
¼ cupWater
2 TbspTahini
2 TbspOlive oil
2Spring onions, finely sliced
1 tspGinger, freshly grated
¼ cupSesame seeds, plus more for coating
1 TbspPoppy seeds

Directions

  1. Cook the rice in a rice cooker, following the instructions and adding the extra 1/4 cup water.
  2. When cooked and still warm add tahini, olive oil, spring onions, ginger, sesame and poppy seeds to the rice and mix well. Season to taste.
  3. Wetting your hands first, squish the mixture into small balls and roll into sesame seeds. Eat as is or fry in coconut oil if you would like the extra crunch.
  4. Serve with salad for lunch or as a snack with tamari for dipping.
